- 1 pound chicken thighs, boneless and skinless
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 cups okra, sliced
- 2 tablespoons gumbo seasoning
- Salt and pepper to taste
- 2 cups cooked rice, for serving
Instructions
- Place chicken thighs and sausage in the crock pot.
- Add onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, okra, and gumbo seasoning.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken before serving.
- Serve over cooked rice.
Notes
- Adjust seasoning to your preference.
- Use fresh or frozen okra as desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
