Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups okra, sliced
  • 2 tablespoons gumbo seasoning
  • Salt and pepper to taste
  • 2 cups cooked rice, for serving

Instructions

  1. Place chicken thighs and sausage in the crock pot.
  2. Add onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, okra, and gumbo seasoning.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred chicken before serving.
  6. Serve over cooked rice.

  • Adjust seasoning to your preference.
  • Use fresh or frozen okra as desired.
