- 4 chicken fillets
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 cup all-purpose flour
- 1 red bell pepper
- 1/2 cup almonds
- 2 cloves garlic
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the romesco sauce by roasting the red bell pepper, almonds, and garlic in the oven for 20 minutes.
- In a bowl, combine breadcrumbs and Parmesan cheese.
- Dredge each chicken fillet in flour, dip in beaten eggs, and coat with the breadcrumb mixture.
- Place the chicken on a baking sheet and bake for 25-30 minutes until golden and cooked through.
- In a blender, combine the roasted ingredients, olive oil, and red wine vinegar. Blend until smooth.
- Serve the crunchy chicken with romesco sauce drizzled on top.
Notes
- For extra flavor, marinate the chicken in spices before coating.
- Romesco sauce can be made in advance and stored in the fridge.
