Ingredients

  • 1 cup breadcrumbs

  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the romesco sauce by roasting the red bell pepper, almonds, and garlic in the oven for 20 minutes.
  3. In a bowl, combine breadcrumbs and Parmesan cheese.
  4. Dredge each chicken fillet in flour, dip in beaten eggs, and coat with the breadcrumb mixture.
  5. Place the chicken on a baking sheet and bake for 25-30 minutes until golden and cooked through.
  6. In a blender, combine the roasted ingredients, olive oil, and red wine vinegar. Blend until smooth.
  7. Serve the crunchy chicken with romesco sauce drizzled on top.
