  • 1 cup shredded coconut
  • 1 cup flour

Instructions

  1. Preheat the oil in a deep pan over medium heat.
  2. In a bowl, mix flour, salt, pepper, and garlic powder.
  3. In another bowl, beat the eggs.
  4. Dip each chicken thigh in flour, then in eggs, and finally coat with shredded coconut.
  5. Carefully place the chicken in the hot oil.
  6. Fry until golden brown and cooked through, about 8-10 minutes on each side.
  7. Remove and drain on paper towels.
