- 4 chicken thighs
- 1 cup shredded coconut
- 1 cup flour
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- Oil for frying
Instructions
- Preheat the oil in a deep pan over medium heat.
- In a bowl, mix flour, salt, pepper, and garlic powder.
- In another bowl, beat the eggs.
- Dip each chicken thigh in flour, then in eggs, and finally coat with shredded coconut.
- Carefully place the chicken in the hot oil.
- Fry until golden brown and cooked through, about 8-10 minutes on each side.
- Remove and drain on paper towels.

- Adjust seasoning to taste.
- Serve with dipping sauce.
