- 1 lb chicken, cut into pieces
- 2 tbsp curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can coconut milk
- 1 tbsp olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and garlic, sauté until soft.
- Add chicken pieces and curry powder, stirring to coat.
- Pour in coconut milk and bring to a simmer.
- Cook for 20 minutes or until chicken is cooked through.
- Season with salt and garnish with cilantro before serving.
