Ingredients

- 2 pounds chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup rice
- 1 cup mixed vegetables
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon paprika
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken thighs and brown on both sides.
- Remove chicken and set aside.
- Add onion and garlic to the pot, sauté until softened.
- Stir in rice, mixed vegetables, salt, pepper, and paprika.
- Pour in chicken broth and bring to a boil.
- Return chicken to the pot, cover, and reduce heat.
- Simmer for 25 minutes or until rice is cooked.
- Fluff rice with a fork and serve.
