Fiesta Chicken Instant Pot: 20-Minute Flavor Explosion

A quick and flavorful fiesta chicken made in an Instant Pot.

Ingredients

  • 2 pounds chicken breast
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Place chicken breast in the Instant Pot.
  2. Add black beans, corn, salsa, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Seal the lid and set to high pressure for 10 minutes.
  4. Once done, release the pressure manually.
  5. Shred the chicken with two forks and mix well with the other ingredients.
  6. Serve warm with tortillas or rice.

  • Store leftovers in an airtight container.
  • Reheat in the microwave or on the stove.
