Filipino Chicken Adobo: 5 Emotional Reasons to Cook It

Ingredients

  • 1 kg chicken, cut into pieces
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/4 cup water
  • 1 onion, sliced
  • 5 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. Combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns in a bowl. Marinate for at least 30 minutes.
  2. Heat oil in a pot over medium heat.
  3. Add the onion and sauté until translucent.
  4. Add marinated chicken, including marinade, to the pot.
  5. Pour in water and bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Remove the lid and cook for another 10 minutes or until sauce thickens.
  8. Season with salt to taste before serving.

Notes

  • Serve with steamed rice.
  • You can add potatoes or hard-boiled eggs for variation.
  • Adjust vinegar and soy sauce according to taste.
