Ingredients

- 2 cups chicken broth
- 1 cup cooked chicken, shredded

- 1 lemon, juiced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 tablespoon olive oil

- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add carrots and celery. Sauté until soft.
- Add ginger and cook for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and lemon juice.
- Season with salt and pepper.
- Simmer for 10 minutes.
- Serve hot and garnish with fresh parsley.
