Gochujang Chicken with Broccolini & Crispy Rice: 5 Flavor Bombs

Ingredients

  • 1 lb chicken thighs
  • 2 tbsp gochujang
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 bunch broccolini
  • 2 cups cooked rice
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix gochujang, soy sauce, honey, and sesame oil in a bowl.
  3. Coat chicken thighs with the marinade.
  4. Place chicken on a baking sheet and bake for 25-30 minutes.
  5. While the chicken cooks, heat vegetable oil in a pan over medium heat.
  6. Add cooked rice to the pan and press down to form a crust. Cook until crispy.
  7. Blanch broccolini in boiling water for 2 minutes.
  8. Plate crispy rice, top with chicken, and serve with broccolini.

Notes

  • Adjust gochujang for desired spice level.
  • Use leftover rice for best crispy texture.
  • Add sesame seeds for garnish if desired.
