Ingredients

- 1 lb chicken thighs
- 2 tbsp gochujang
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 bunch broccolini
- 2 cups cooked rice
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Mix gochujang, soy sauce, honey, and sesame oil in a bowl.
- Coat chicken thighs with the marinade.
- Place chicken on a baking sheet and bake for 25-30 minutes.
- While the chicken cooks, heat vegetable oil in a pan over medium heat.
- Add cooked rice to the pan and press down to form a crust. Cook until crispy.
- Blanch broccolini in boiling water for 2 minutes.
- Plate crispy rice, top with chicken, and serve with broccolini.
Notes
- Adjust gochujang for desired spice level.
- Use leftover rice for best crispy texture.
- Add sesame seeds for garnish if desired.
