Ingredients

- 1 whole chicken, cut into pieces
- 8 cups of water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine chicken and water. Bring to a boil.
- Add carrots, celery, onion, garlic, bay leaf, salt, and pepper.
- Reduce heat and simmer for 1 hour.
- Remove chicken, shred meat, and return to the pot.
- Simmer for an additional 15 minutes.
- Garnish with fresh parsley before serving.
Notes
- Adjust seasoning to your taste.
- You can add noodles or rice if desired.
- Store leftovers in an airtight container in the fridge.
