Ingredients

- 8 oz penne pasta
- 1 lb chicken fillet, diced
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Add cherry tomatoes, cucumber, red onion, and olives to the skillet.
- Stir in cooked pasta, lemon juice, oregano, salt, and pepper.
- Remove from heat and top with feta cheese before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Add spinach or arugula for extra greens.
- Marinate the chicken for more flavor.
