- 4 boneless, skinless chicken fillets
- 1 cup chicken broth
- 1/2 cup olive oil
- 1 lemon, juiced
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
Instructions
- Place chicken fillets in the slow cooker.
- In a bowl, mix chicken broth, olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour the mixture over the chicken.
- Add olives and cherry tomatoes on top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Before serving, sprinkle feta cheese on top.
Notes
- Serve with rice or pita bread.
- Adjust seasoning to taste.
- Leftovers can be stored in the fridge for up to 3 days.
