Ingredients

- 4 chicken fillets
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix spinach, feta, sun-dried tomatoes, garlic, oregano, thyme, salt, and pepper.
- Cut a pocket in each chicken fillet and fill it with the mixture.
- Heat olive oil in a pan over medium heat and sear the chicken fillets for 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake for 25-30 minutes.
- Check for doneness and serve hot.

- Serve with a side salad for a complete meal.
