Ingredients

  • 1 lb green beans, trimmed

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Blanch the green beans in boiling water for 3-4 minutes. Drain and cool in ice water.
  3. In a large bowl, combine cooked pasta, green beans, cherry tomatoes, and red onion.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Top with feta cheese if desired.
  7. Chill in the refrigerator for 30 minutes before serving.
