- 8 oz pasta
- 1 lb green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Blanch the green beans in boiling water for 3-4 minutes. Drain and cool in ice water.
- In a large bowl, combine cooked pasta, green beans, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Top with feta cheese if desired.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or cucumbers.
- This salad can be made a day ahead.
