- 4 boneless chicken fillets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup fresh parsley
- 1/2 cup fresh cilantro
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup olive oil
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, garlic powder, salt, and pepper. Coat the chicken fillets with this mixture.
- In a separate bowl, combine parsley, cilantro, red wine vinegar, minced garlic, red pepper flakes, and olive oil to make the chimichurri sauce.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes.
- Serve the grilled chicken topped with chimichurri sauce.
Notes
- Use a meat thermometer to check chicken doneness (165°F).
- Chimichurri can be made ahead of time and stored in the fridge.
- Serve with grilled vegetables or rice for a complete meal.
