Grilled Chicken with Roasted Red Pepper Hummus Blissful Pairing

Ingredients

  • 2 chicken fillets
  • 1 cup roasted red peppers
  • 1 can chickpeas, drained
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 4 pita breads

Instructions

  1. Preheat grill to medium-high heat.
  2. Season chicken fillets with salt and pepper.
  3. Grill chicken for 6-7 minutes on each side or until fully cooked.
  4. In a blender, combine roasted red peppers, chickpeas, tahini, olive oil, garlic, lemon juice, salt, and pepper.
  5. Blend until smooth to make hummus.
  6. Warm pita breads on the grill for 1-2 minutes.
  7. Slice grilled chicken and serve with hummus and pita.
