Ingredients

- 1 cup of cooked chicken, shredded
- 1 cup of jasmine rice
- 4 cups of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon of ginger, grated
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until soft.
- Add ginger and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add jasmine rice and cooked chicken. Simmer for 15 minutes.
- Stir in soy sauce.
- Garnish with fresh parsley before serving.
Notes
- Adjust the consistency with more broth if needed.
- Use leftover chicken for quicker preparation.
- Add more vegetables for extra nutrition.
