- 2 cups shredded cooked chicken
- 1 cup salsa verde
- 8 corn tortillas
- 1 cup reduced-fat cheese
- 1/2 cup chopped onion
- 1/4 cup chopped cilantro
- 1 teaspoon cumin
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix chicken, 1/2 cup salsa verde, onion, cilantro, cumin, and salt.
- Warm tortillas in a skillet to make them pliable.
- Fill each tortilla with the chicken mixture and roll it up.
- Place the rolled tortillas in a baking dish seam side down.
- Pour remaining salsa verde over the top and sprinkle with cheese.
- Bake for 20 minutes or until cheese is melted.
- Serve hot.
