- 2 chicken fillets
- 1 cup couscous
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup water
- 1/2 cup cucumber, diced
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley for garnish
Instructions
- Preheat your grill or stovetop grill pan over medium heat.
- Mix olive oil, oregano, garlic powder, salt, and pepper in a bowl.
- Coat chicken fillets with the herb mixture.
- Grill chicken for 6-7 minutes on each side until cooked through.
- Meanwhile, bring water to a boil in a saucepan.
- Add couscous to boiling water, cover, and remove from heat. Let it sit for 5 minutes.
- In a separate bowl, combine Greek yogurt, lemon juice, minced garlic, and diced cucumber to make tzatziki.
- Fluff couscous with a fork and serve it in bowls.
- Slice grilled chicken and place it on top of couscous.
- Drizzle with tzatziki and garnish with fresh parsley.
Notes
- Feel free to add other vegetables to the couscous.
- Chicken can be marinated for a few hours for more flavor.
- Store leftover tzatziki in the refrigerator for up to three days.
