Ingredients

  • 2 chicken fillets
  • 1 cup couscous
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup water
  • 1/2 cup cucumber, diced
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. Mix olive oil, oregano, garlic powder, salt, and pepper in a bowl.
  3. Coat chicken fillets with the herb mixture.
  4. Grill chicken for 6-7 minutes on each side until cooked through.
  5. Meanwhile, bring water to a boil in a saucepan.
  6. Add couscous to boiling water, cover, and remove from heat. Let it sit for 5 minutes.
  7. In a separate bowl, combine Greek yogurt, lemon juice, minced garlic, and diced cucumber to make tzatziki.
  8. Fluff couscous with a fork and serve it in bowls.
  9. Slice grilled chicken and place it on top of couscous.
  10. Drizzle with tzatziki and garnish with fresh parsley.

Notes

  • Feel free to add other vegetables to the couscous.
  • Chicken can be marinated for a few hours for more flavor.
  • Store leftover tzatziki in the refrigerator for up to three days.
