- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 pound ground beef
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion, carrots, and celery. Cook until soft.
- Stir in garlic and bell pepper. Cook for 2 minutes.
- Add zucchini and mushrooms. Cook for another 5 minutes.
- Add ground beef and cook until browned.
- Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper.
- Simmer for 30 minutes, stirring occasionally.
- Serve with pasta and top with Parmesan cheese.
Notes
- Use any vegetables you have on hand.
- Let the sauce simmer longer for richer flavor.
- Can be stored in the fridge for up to 3 days.
