Homemade Bolognese with Loads of Veg for Comforting Bliss

A hearty homemade bolognese sauce packed with vegetables.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 pound ground beef
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion, carrots, and celery. Cook until soft.
  3. Stir in garlic and bell pepper. Cook for 2 minutes.
  4. Add zucchini and mushrooms. Cook for another 5 minutes.
  5. Add ground beef and cook until browned.
  6. Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper.
  7. Simmer for 30 minutes, stirring occasionally.
  8. Serve with pasta and top with Parmesan cheese.

Notes

  • Use any vegetables you have on hand.
  • Let the sauce simmer longer for richer flavor.
  • Can be stored in the fridge for up to 3 days.
