- 1 lemon, halved
- 4 garlic cloves, smashed

Instructions
- Preheat your oven to 425°F (220°C).
- Remove the chicken from packaging and pat it dry with paper towels.
- Rub olive oil all over the chicken.
- Season the chicken generously with salt and pepper.
- Stuff the cavity with lemon halves, garlic, and fresh herbs.
- Place the chicken fillet side up in a roasting pan.
- Roast in the oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 15 minutes before carving.
