Hummus Chicken & Vegetables: A Delightful 30-Minute Meal

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken with hummus.
  3. Spread the chicken and hummus mixture in a baking dish.
  4. Add the cherry tomatoes, cucumber, bell pepper, and red onion on top.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Bake for 25-30 minutes until heated through.
  7. Serve warm and enjoy.
