Ingredients

  • 1 whole chicken (34 lbs)
  • 2 tablespoons yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix yogurt, olive oil, lemon juice, garlic paste, ginger paste, garam masala, turmeric, cumin, coriander, chili powder, and salt.
  3. Rub the spice mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan.
  5. Roast in the oven for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10 minutes before carving.
