Ingredients

  • 1 lb chicken fillet
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 1 cup mixed vegetables (carrots, peas, bell peppers)

Instructions

  1. Season chicken with garlic powder, onion powder, paprika, salt, and pepper.
  2. Turn on the Instant Pot and select the sauté function.
  3. Add olive oil and brown the chicken for about 3-4 minutes.
  4. Add chicken broth and mixed vegetables to the pot.
  5. Close the lid and set the valve to sealing.
  6. Select the manual setting and cook on high pressure for 10 minutes.
  7. After cooking, let the pressure release naturally for 5 minutes, then quick release the remaining pressure.
  8. Remove chicken, shred it, and return it to the pot to mix with vegetables.
  9. Serve warm.
