Ingredients

  • 4 chicken thighs, skinless
  • 1 onion, chopped
  • 2 bell peppers, sliced
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Set the Instapot to sauté mode and heat olive oil.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and add onion, bell peppers, and garlic. Sauté until soft.
  4. Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Return chicken to the pot.
  6. Seal the lid and cook on high pressure for 15 minutes.
  7. Let pressure release naturally for 10 minutes, then quick release remaining pressure.
  8. Serve hot over pasta or rice.
