Ingredients

- 4 chicken thighs, skinless
- 1 onion, chopped
- 2 bell peppers, sliced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Set the Instapot to sauté mode and heat olive oil.
- Add chicken thighs and brown on both sides.
- Remove chicken and add onion, bell peppers, and garlic. Sauté until soft.
- Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Return chicken to the pot.
- Seal the lid and cook on high pressure for 15 minutes.
- Let pressure release naturally for 10 minutes, then quick release remaining pressure.
- Serve hot over pasta or rice.
Notes
- You can use chicken fillets instead of thighs.
- Feel free to add mushrooms or olives for extra flavor.
