Ingredients

- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup shrimp, peeled and deveined
- 1 cup mussels, cleaned
- 1 cup squid, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, bell pepper, and garlic. Sauté until soft.
- Stir in rice and cook for 2 minutes.
- Add chicken broth, paprika, cayenne, thyme, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add shrimp, mussels, and squid. Stir gently.
- Cover and cook for another 5-7 minutes until seafood is cooked.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Adjust spices to your taste.
- Use fresh seafood for best flavor.
- Serve with lemon wedges.
