Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup shrimp, peeled and deveined
  • 1 cup mussels, cleaned
  • 1 cup squid, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and garlic. Sauté until soft.
  3. Stir in rice and cook for 2 minutes.
  4. Add chicken broth, paprika, cayenne, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Add shrimp, mussels, and squid. Stir gently.
  7. Cover and cook for another 5-7 minutes until seafood is cooked.
  8. Remove from heat and let sit for 5 minutes before serving.
