- 4 cups diced potatoes
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 1/2 cup cooked bacon, crumbled
- 1/2 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine diced potatoes, cooked chicken, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper.
- Spread the mixture evenly in a greased baking dish.
- Top with shredded cheddar cheese and crumbled bacon.
- Bake for 45-50 minutes, or until the potatoes are tender.
- Remove from oven and sprinkle with chopped green onions before serving.
Notes
- You can use leftover chicken for this recipe.
- Feel free to add other vegetables if desired.
