Ingredients

  • 1 lb chicken thighs
  • 1 cup rice
  • 2 cups chicken broth

  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion, garlic, and bell pepper to the pan. Sauté until softened.
  5. Add rice and stir to coat.
  6. Pour in chicken broth and diced tomatoes.
  7. Add oregano, paprika, salt, and pepper. Stir well.
  8. Return chicken to the pan, cover, and simmer for 25 minutes.
  9. Fluff rice before serving.
