Ingredients

- 1 lb chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 tsp oregano
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken thighs and brown on both sides.
- Remove chicken and set aside.
- Add onion, garlic, and bell pepper to the pan. Sauté until softened.
- Add rice and stir to coat.
- Pour in chicken broth and diced tomatoes.
- Add oregano, paprika, salt, and pepper. Stir well.
- Return chicken to the pan, cover, and simmer for 25 minutes.
- Fluff rice before serving.
Notes
- Use bone-in chicken for more flavor.
- Adjust spices to your preference.
- Serve with a side salad.
