- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 red onion, quartered
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper.
- Rub the mixture all over the chicken.
- Place the chicken in a roasting pan.
- Surround the chicken with cherry tomatoes and red onion.
- Roast in the oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
- Garnish with fresh parsley before serving.

- For extra flavor, marinate the chicken overnight.
- Serve with rice or a fresh salad.
