- 12 corn tortillas
- 2 cups cooked ground beef
- 1 cup refried beans
- 2 cups salsa
- 2 cups shredded cheese
- 1 cup corn
- 1 diced onion
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the diced onion until translucent.
- Add ground beef to the skillet and cook until browned.
- Stir in refried beans, salsa, corn, cumin, chili powder, and salt.
- In a baking dish, layer 3 tortillas, followed by a layer of the beef mixture and cheese.
- Repeat the layers until all ingredients are used, finishing with cheese on top.
- Bake for 25-30 minutes until cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables.
- Use black beans instead of refried beans for a variation.
- Top with fresh cilantro or avocado for garnish.
