- 4 large baking potatoes
- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the baking potatoes.
- Poke holes in each potato with a fork.
- Bake the potatoes for about 45 minutes until tender.
- While the potatoes bake, mix the chicken, cream cheese, cheddar cheese, sour cream, green onions, garlic powder, salt, and pepper in a bowl.
- Once potatoes are done, slice them open and fluff the insides with a fork.
- Stuff each potato with the chicken mixture.
- Return the stuffed potatoes to the oven for another 10 minutes.
- Serve warm and enjoy.
Notes
- Feel free to add your favorite spices to the chicken mixture.
- You can substitute rotisserie chicken for convenience.
- Top with additional cheese or bacon bits if desired.
