- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 cup ale
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 teaspoon baking powder
- 1 egg
Instructions
- Brown beef in a large pot over medium heat.
- Add onion, carrots, and garlic; cook until softened.
- Stir in ale, beef broth, tomato paste, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- In a bowl, mix flour, milk, melted butter, baking powder, and egg to form a dough.
- Add dumplings to the pot and cook for an additional 15 minutes.
- Serve hot and enjoy.
Notes
- Use any dark ale for richer flavor.
- Substitute vegetables as desired.
- Leftovers can be stored in the fridge for up to 3 days.
