One Skillet Lemon Butter Dijon Chicken and Orzo Bliss

A simple and delicious one skillet meal featuring lemon butter Dijon chicken and orzo with feta sauce.

Ingredients

  • 4 chicken fillets
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season the chicken fillets with salt and pepper.
  2. In a skillet, heat olive oil over medium heat.
  3. Add chicken fillets and cook until golden brown, about 6-7 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. Add orzo to the skillet and stir for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Stir in lemon juice and Dijon mustard.
  9. Return chicken to skillet and cook until fully cooked, about 5 more minutes.
  10. Remove from heat and stir in feta cheese and parsley.

Notes

  • Serve warm.
  • Can substitute chicken with turkey.
