Ingredients

- 4 chicken fillets
- 2 tablespoons Dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 cups orzo pasta
- 4 cups chicken broth
- 1 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Season the chicken fillets with salt and pepper.
- In a skillet, heat olive oil over medium heat.
- Add chicken fillets and cook until golden brown, about 6-7 minutes per side.
- Remove chicken from skillet and set aside.
- Add orzo to the skillet and stir for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in lemon juice and Dijon mustard.
- Return chicken to skillet and cook until fully cooked, about 5 more minutes.
- Remove from heat and stir in feta cheese and parsley.
Notes
- Serve warm.
- Can substitute chicken with turkey.
- Adjust seasoning to taste.
