- 2 chicken fillets, diced
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, diced
- 3 cups spinach
- 1/2 cup pesto
- 1 ball of burrata cheese
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the diced chicken and season with salt and pepper.
- Cook until chicken is browned and cooked through, about 6-8 minutes.
- Add cherry tomatoes, zucchini, and bell pepper to the skillet.
- Sauté until vegetables are tender, about 5 minutes.
- Stir in spinach and pesto, cooking until spinach wilts.
- Top with burrata cheese and serve warm.
