Pesto Chicken & Vegetable Skillet with Burrata Bliss

Ingredients

  • 2 chicken fillets, diced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 3 cups spinach
  • 1/2 cup pesto
  • 1 ball of burrata cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced chicken and season with salt and pepper.
  3. Cook until chicken is browned and cooked through, about 6-8 minutes.
  4. Add cherry tomatoes, zucchini, and bell pepper to the skillet.
  5. Sauté until vegetables are tender, about 5 minutes.
  6. Stir in spinach and pesto, cooking until spinach wilts.
  7. Top with burrata cheese and serve warm.
