- 2 pounds chicken thighs
- 4 medium potatoes, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Turn on the Instant Pot and set it to sauté mode.
- Add olive oil and sauté onions and garlic until fragrant.
- Add chicken thighs and brown on both sides.
- Pour in chicken broth and add paprika, salt, and pepper.
- Add diced potatoes on top.
- Close the lid and set the Instant Pot to manual mode for 10 minutes.
- Once done, do a quick release of the pressure.
- Stir everything together and serve hot.
Notes
- Adjust seasoning to taste.
- Use sweet potatoes for a different flavor.
- Serve with fresh herbs for garnish.
