Potato Chicken Instant Pot: 7 Comforting Minutes to Dinner

A quick and easy potato chicken recipe made in the Instant Pot.

Ingredients

  • 2 pounds chicken thighs
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Turn on the Instant Pot and set it to sauté mode.
  2. Add olive oil and sauté onions and garlic until fragrant.
  3. Add chicken thighs and brown on both sides.
  4. Pour in chicken broth and add paprika, salt, and pepper.
  5. Add diced potatoes on top.
  6. Close the lid and set the Instant Pot to manual mode for 10 minutes.
  7. Once done, do a quick release of the pressure.
  8. Stir everything together and serve hot.

Notes

  • Adjust seasoning to taste.
  • Use sweet potatoes for a different flavor.
  • Serve with fresh herbs for garnish.
