- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 lemon, halved
- Fresh herbs (rosemary, thyme, or parsley)
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub the olive oil all over the chicken.
- Season with salt and pepper, inside and out.
- Stuff the cavity with garlic, lemon, and herbs.
- Place the chicken in a roasting pan.
- Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10-15 minutes before carving.
