- 1 whole chicken (about 4 lbs)
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 lemon, cut into quarters
- 2 tablespoons olive oil
- Fresh herbs (rosemary or thyme) for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub the spice mixture all over the chicken, including under the skin.
- Place lemon quarters inside the cavity of the chicken.
- Drizzle olive oil over the chicken.
- Place the chicken in a roasting pan and roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
- Garnish with fresh herbs before serving.
