- 1 cup of jasmine rice
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 avocado, sliced
- 1 cucumber, sliced
- 2 green onions, chopped
- 1/4 cup of mayonnaise
- 1 tablespoon of sriracha
- Salt and pepper to taste
Instructions
- Cook jasmine rice according to package instructions.
- In a bowl, mix shrimp with olive oil, garlic powder, paprika, salt, and pepper.
- Heat a skillet over medium heat and cook shrimp until pink, about 3-4 minutes per side.
- In a small bowl, combine mayonnaise and sriracha to make spicy mayo.
- Assemble bowls with rice, shrimp, avocado, cucumber, and green onions.
- Drizzle spicy mayo over the top before serving.
Notes
- Feel free to add other vegetables.
- Adjust sriracha to taste for more or less spice.
