- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup shredded cheese
- 1 cup cooked rice
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, chili powder, and cumin.
- Stir in the cooked rice until evenly mixed.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until heated through and cheese is melted.
- Let it cool for a few minutes before serving.
Notes
- You can substitute chicken with turkey or tofu for variation.
- Add jalapeños for extra heat.
- Serve with avocado or sour cream for garnish.
