- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 1 cup rice, cooked
- 1/2 cup salsa
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine chicken, black beans, corn, diced tomatoes, taco seasoning, and cooked rice.
- Spread the mixture into a baking dish.
- Pour salsa over the top.
- Sprinkle cheese evenly on top.
- Bake for 25-30 minutes until heated through and cheese is melted.
Notes
- Serve with avocado or sour cream.
- Use leftover chicken for quicker prep.
- This can be made in advance and stored in the fridge.
