- 1 whole chicken, spatchcocked
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 lemon, sliced
- Fresh herbs for garnish
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the chicken with olive oil.
- Season the chicken with salt, pepper, garlic powder, and paprika.
- Place the chicken skin-side down in a hot cast iron skillet.
- Add lemon slices around the chicken.
- Cook on the stovetop for 5-7 minutes until the skin is golden.
- Flip the chicken skin-side up and transfer the skillet to the oven.
- Bake for 30-40 minutes until the internal temperature reaches 165°F (74°C).
Notes
- Let the chicken rest for 10 minutes before serving.
- Adjust seasoning to taste.
- Use a meat thermometer for best results.
