Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil

  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 lemon, sliced
  • Fresh herbs (optional, such as rosemary or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the chicken fillet-side down on a cutting board.
  3. Using kitchen shears, cut along each side of the backbone and remove it.
  4. Flip the chicken over and press down on the fillet to flatten it.
  5. Rub olive oil, salt, pepper, garlic powder, and paprika all over the chicken.
  6. Place lemon slices and herbs on top of the chicken.
  7. Place the chicken on a baking sheet, fillet side up.
  8. Bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 165°F (75°C).
  9. Let it rest for 10 minutes before carving.
