- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 lemon, sliced
- Fresh herbs (optional, such as rosemary or thyme)
Instructions
- Preheat your oven to 425°F (220°C).
- Place the chicken fillet-side down on a cutting board.
- Using kitchen shears, cut along each side of the backbone and remove it.
- Flip the chicken over and press down on the fillet to flatten it.
- Rub olive oil, salt, pepper, garlic powder, and paprika all over the chicken.
- Place lemon slices and herbs on top of the chicken.
- Place the chicken on a baking sheet, fillet side up.
- Bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
Notes
- Make sure to remove excess fat from the chicken before cooking.
- You can marinate the chicken for a few hours for extra flavor.
- Use a meat thermometer for accurate cooking.
