- 4 chicken fillets
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon chopped fresh cilantro
Instructions
- In a bowl, mix coconut milk, red curry paste, lime juice, brown sugar, salt, and black pepper.
- Place chicken fillets in a ziplock bag and pour marinade over the chicken.
- Seal the bag and refrigerate for at least 2 hours or overnight.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and discard the marinade.
- Grill chicken for 6-7 minutes on each side or until fully cooked.
- Garnish with chopped cilantro before serving.
Notes
- Adjust the spice level by adding more or less curry paste.
- Serve with rice or grilled vegetables.
- Marinating overnight enhances the flavor.
