- 4 chicken fillets
- 1 cup spinach, chopped
- 1/2 cup cream cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix spinach, cream cheese, mozzarella, sun-dried tomatoes, and garlic.
- Cut a pocket in each chicken fillet.
- Stuff the chicken fillets with the mixture.
- Season the outside of the chicken with salt and pepper.
- Place the stuffed chicken in a baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Let it rest for 5 minutes before serving.
Notes
- You can substitute spinach with kale if preferred.
- For extra flavor, add herbs like basil or oregano.
- Serve with a side salad or vegetables.
