Ingredients

  • 4 chicken fillets
  • 2 tablespoons sumac
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup sundried tomatoes, chopped
  • 1/4 cup black olives, pitted and chopped
  • 1/4 cup green olives, pitted and chopped
  • 2 tablespoons capers
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. In a bowl, mix sumac, olive oil, salt, and pepper.
  2. Coat chicken fillets with the marinade. Let sit for 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes per side or until fully cooked.
  5. In another bowl, combine sundried tomatoes, black and green olives, capers, lemon juice, and garlic to make tapenade.
  6. Serve grilled chicken topped with sundried tomato and olive tapenade.

Notes

  • Adjust seasoning to taste.
  • Serve with a side salad or rice.
  • Chicken can be marinated overnight for more flavor.
