Ingredients

- 4 chicken fillets
- 2 tablespoons sumac
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup sundried tomatoes, chopped
- 1/4 cup black olives, pitted and chopped
- 1/4 cup green olives, pitted and chopped
- 2 tablespoons capers
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- In a bowl, mix sumac, olive oil, salt, and pepper.
- Coat chicken fillets with the marinade. Let sit for 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-7 minutes per side or until fully cooked.
- In another bowl, combine sundried tomatoes, black and green olives, capers, lemon juice, and garlic to make tapenade.
- Serve grilled chicken topped with sundried tomato and olive tapenade.
Notes
- Adjust seasoning to taste.
- Serve with a side salad or rice.
- Chicken can be marinated overnight for more flavor.
