Ingredients

- 1 lb chicken or pork, diced
- 1 cup bell peppers, diced
- 1 cup pineapple chunks
- 1/2 cup onion, diced
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Add chicken or pork and cook until browned.
- Add onion and bell peppers; sauté until soft.
- In a bowl, mix ketchup, vinegar, brown sugar, soy sauce, and cornstarch.
- Add pineapple and sauce mixture to the pan.
- Stir well and cook until sauce thickens.
- Season with salt and pepper.
- Serve hot over rice.
Notes
- Adjust sweetness by adding more or less sugar.
- You can use tofu for a vegetarian option.
- Garnish with sesame seeds if desired.
