Ingredients

  • 1 lb chicken or pork, diced
  • 1 cup bell peppers, diced
  • 1 cup pineapple chunks
  • 1/2 cup onion, diced
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add chicken or pork and cook until browned.
  3. Add onion and bell peppers; sauté until soft.
  4. In a bowl, mix ketchup, vinegar, brown sugar, soy sauce, and cornstarch.
  5. Add pineapple and sauce mixture to the pan.
  6. Stir well and cook until sauce thickens.
  7. Season with salt and pepper.
  8. Serve hot over rice.

Notes

  • Adjust sweetness by adding more or less sugar.
  • You can use tofu for a vegetarian option.
  • Garnish with sesame seeds if desired.
