Ingredients

- 1 pound boneless, skinless chicken fillets
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup tortilla strips
- 1 avocado, diced
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add chicken fillets and cook until browned.
- Stir in diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred, and return to the pot.
- Serve hot, topped with tortilla strips and avocado.

- This soup can be made in advance and stored in the fridge.
