- 1 cup white beans, dried
- 4 cups chicken broth
- 4 slices bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Soak the white beans overnight.
- Drain and rinse the beans.
- In a pot, cook the bacon until crispy. Remove and set aside.
- Add onion, carrots, and celery to the pot. Cook until soft.
- Add garlic and thyme. Cook for 1 minute.
- Add beans and chicken broth. Bring to a boil.
- Reduce heat and simmer for 1 hour.
- Season with salt and pepper. Stir in bacon before serving.
