- 2 cups cooked, shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup corn (frozen or canned)
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add shredded chicken, white beans, chicken broth, green chilies, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add corn and stir in sour cream until well combined.
- Serve hot, topped with cheese if desired.
Notes
- This dish can be made ahead and reheated.
- Adjust spices to taste for more heat.
- Serve with tortilla chips for crunch.
