White Chicken Chili: 5 Comforting Steps to Happiness

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup corn (frozen or canned)
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add shredded chicken, white beans, chicken broth, green chilies, cumin, oregano, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add corn and stir in sour cream until well combined.
  5. Serve hot, topped with cheese if desired.
