Ingredients

  • 2 chicken breasts
  • 1 cup cauliflower rice
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes
  • 1/4 cup Whole 30 compliant BBQ sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a pan and sear chicken for 3-4 minutes on each side.
  4. Transfer chicken to the oven and bake for 25 minutes.
  5. While chicken bakes, steam broccoli and prepare cauliflower rice.
  6. Once chicken is done, shred it and mix with BBQ sauce.
  7. Assemble the bowl with cauliflower rice, broccoli, cherry tomatoes, and BBQ chicken.
