- 2 chicken breasts
- 1 cup cauliflower rice
- 1 cup broccoli florets
- 1/2 cup cherry tomatoes
- 1/4 cup Whole 30 compliant BBQ sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a pan and sear chicken for 3-4 minutes on each side.
- Transfer chicken to the oven and bake for 25 minutes.
- While chicken bakes, steam broccoli and prepare cauliflower rice.
- Once chicken is done, shred it and mix with BBQ sauce.
- Assemble the bowl with cauliflower rice, broccoli, cherry tomatoes, and BBQ chicken.

- Use any vegetables you prefer.
- Adjust BBQ sauce quantity to taste.
